Rhubarb Crunch
1 cup flour
¾ cup oatmeal
1 cup brown sugar
½ cup melted butter
4 cups diced rhubarb
1 cup white sugar
I cup water
1 tsp vanilla
2 tbsp cornstarch
Mix first four ingredients until crumbly. Press half of the mixture into a greased cakepan. Pour in rhubarb. Combine last four ingredients and cook over low heat until thick and clear. Pour over the rhubarb and top with remaining crumbs. Bake at 325 degrees for 1 hour. Cut in squares while warm. Serve warm or cold.
This makes a 9x9 size pan, for 9x13 pan I double the recipe.

Make pastry for 2 crust pie of desired size
For 9”Pie For 8”Pie
Beat slightly
3 eggs 2 eggs

Mix and stir in…
2 cups sugar 11/2cups sugar
¼ cup flour 3 tbsp four
¾ tsp nutmeg ½ tsp nutmeg
Mix in ..
4 cups cut up rhubarb 3 cups rhubarb
Pour into pastry-lined pie pan
Dot with …
1 tbsp butter 2 tsp butter
Cover with top crust. Bake until nicely browned. Serve slightly warm.
400 degrees for 50 to 60 minutes.
